you're using the standard sorting mechanism, right? this is the one i use:
@Nikolai_Kingsley that's basically what I'm using. I just think I figured out what's going on.
I don't have every Hopper setup yet for items, so as I go ahead and throw stuff in the ones that are setup it must trigger something that make the previous hopper dump its contents. Hopefully that's it. I still have 80 hoppers to fill. When I'm done, I sure hope it actually works. I spent 4 days on this.

one thing that video i linked to mentions is redstone signals from the previous sorting hopper bleeding through to the ones on either side.
@Nikolai_Kingsley okay, I'm going to watch it with sound on this time... 
I am building an autosorter on Bedrock... using waaaaay too many hoppers. Well I got the 11 block think in place, then the block I wanted sorted. But when I set the next item sorting Hopper, the one before it starts emptying the placeholder blocks and the whole thing breaks.
Why?????
